Thursday, the last day of us having pastry class with our beloved Chef Karam. AHH so sad. Anyways, we made Peach Frangipane Tart, but we made it in pie size. As always, Chef Karam will make something extra for us.

Couple of The Year - Worm and Chipsmore-Brinjal



This is the filling of the pie before you cover it up with another layer of dough.
First you cream the butter (soften it), add in the ground almond, stir, icing sugar, stir, whole egg, stir
Eh voila! you have your bla-bla frangipane filling.



Oh yea, when you stir the bla-bla frangipane filling, you have to look like Shannon to
get the maximum effect. The evil stir.



Chef Karam is The Man.


"Since you guys are such good kids, i'll give you all a taste of chocolate cake." COOL!! Lemme tell you, it's the bestest chocolate mousse cake i've ever eaten my entire life. I bet no one that ate it dare say no. Seriously, you can feel the bitter-sweet soft mousse melt in your mouth, giving you goosebumps. Don't trust me? look at June's face. You look just like her when you eat it.

June and I had a station making the shortcrust pastry for the peach tart. It started off with rubbing cold butter with soft flour until it's in pea size, then add in the egg yolk and knead it until it turns into a dough. Wrap in a cling film, chill for about 20minutes. After that take it out from the chiller and roll it. Sadly, our dough is quite stubborn, it kept breaking apart. We kept chilling it and rolling it over and over again while others have finished their pie and ready to be garnished. At times of desperation, June suggested that we "Cut and Paste" it.. so this is how it looks like.


No choice but to do this, artistic.

Most of them left after they had a taste of their own Peach Frangipane but Chef Karam asked if we wanted to stay back so he could make us Treacle Tart, the one we love so much to get just one bite. Plan changed because there's no sufficient ingredients in the college to make them so he said he'll made us croissant. We waited in the pastry kitchen while Chef Karam went missing. To fully use our time, we studied for our front office because we have assessment after that. We sat down on the floor and listen to Eevon like she's telling us bedtime stories.



I almost forgot my pie and when i took it out. OMG, it looks kinda cool actually. Like Cracked walls. Anyways, nobody will know how 'lovely' they look because i will cover them with peaches! Look!

Now you see ONLY peaches.


I chilled it in the gigantic chiller and went back to join them. Talking crap and telling grandmother stories.

I took my pie out and cut it evenly, it taste LOVELY. Muah! Taste like heaven, i hope i can let my family to taste it. Anyways i ta pao one slice for Meng Zhen.


After like.. 3hours of waiting for Chef Karam, he finally came back. With a steel rolling pin and a sheet of nicely pale-yellow dough around it. It's the croissant dough. It look like a piece of paper like what you see in Cinderella where the guy call out the names of the girl who is going to dance with the prince, only you don't see any wordings on it.


Actually i recorded a video of him making the croissant, but you guys have to wait while i upload it into YouTube. Karam is gonna be in YouTube!




Seee!!! This is how consistent his artwork is. They are cute little croissants. Too bad we can't stay there for to see him bake them because we have Front Office assessment. Off we went and LG excused himself to Ms Charmaine telling her "Ms. Charmaine, i'm going to the pastry class to get the croissants from Chef Karam." "Oh? got food? okay okay, go take." See! how cool is our lecturer. LG came back with bunch of croissants wrapped in the cling film, soon.. the Front Office is filled with the buttery smell of the freshest croissants. It has a crisp sound when i tear it apart.


Oh how i miss it.
